INGREDIENT : 250g/8oz egusi (melon seeds)
250g/8oz beans
1 large onion (diced)
I fresh chilli (diced)
salt to taste
groundnut-oil for frying
Soak the bean in cold water for 10 minutes, wash to remove skin. Grind the
beans and melon seeds together int a smooth paste. Place in a clean bowl and
beat well until light and fluffy adding some water if necessary. Add the diced
onion and chilli, season with salt. Heat the oil spoon the mixture into oil
and fry until golden brown. Drain and serve hot.
